So I had to pick some of my favorite dishes and make them as simple as possible to make my healthy eating doable!
Here are some of my favorite recipes for you.
Southwest Breakfast Bowl
- 2 eggs
- 1/2c bell pepper and onion
- 1/2c sweet potato mashed
- 1tbs cheese
- hot sauce
I start by placing the sweet potato in a crockpot with 1/3c water then I start dicing the bell pepper and onion. Once they are diced, I put them in a frying pan and as they cook, I do 2 scrambled eggs with black pepper and 1tbs cheese next to them. I mix them all together and top with hot sauce!
Everyday Veggie Bowl
- Trader Joe’s everyday seasoning
I love crockpots, they are a life saver for me. I put my chicken with olive oil in my crockpot so when I am in the middle of a crazy busy work day, I can still enjoy some healthy food without meal prepping. Once those are cooked, I will take a frying pan, place my diced zucchini and squash in them with olive oil, cook until done. Throw everything in a bowl then season it with whatever seasoning I feel like using that day. I usually opt out for the Trader Joe’s Everyday Seasoning.
1 pan tacos
- Ground turkey
- peppers and onion
- taco seasoning
- hot sauce
you can add rice and beans on the side if you would like.
In one pan, I cook the ground turkey, peppers and onions then add taco seasoning. Once they are cooked, I place in a lettuce wrap or on top of lettuce for a taco salad and top with avocado and hot sauce.
This can be breakfast, snack or dessert. It is THAT good!
